Fábrica de Bizcochos San Pedro

The Fábrica de Bizcochos San Pedro is one of the most established of Cayambe's many biscuit makers, and the best introduction to what makes the town famous. Bizcochos are made from a simple mixture of butter, lard, flour, and egg yolk, baked to a dry, crumbly texture that keeps well and travels easily. The traditional way to eat them is with a wedge of fresh manaba cheese and a cup of hot chocolate — a combination that sounds humble and tastes exactly right.

The factory is located near the cemetery on the main road through town. They sell direct, and the biscuits come out of the oven throughout the morning. Cayambe's bizcochos were made famous in the 19th century when the railroad arrived and children sold them to passengers through carriage windows; today they're exported across Ecuador and sold in Quito supermarkets, though fresh ones from the source are a different thing entirely.
