Community Oven

Inside the Cité Portugaise, one of the old Portuguese vaulted spaces has been converted into a community oven where locals bring their bread and fish to bake. The ovens date back to the Portuguese occupation of Mazagan, when this building served as a warehouse and later as part of the fortress infrastructure. The tradition of communal baking has continued in various forms since the Moroccan takeover in 1769.

You can sometimes watch bakers bringing trays of bread and fish through the lanes of the medina in the mornings, on their way to the oven. It's an entirely functional operation, not a tourist performance, which gives it a texture that the cistern — for all its drama — lacks.
