Zibo Barbecue

Zibo barbecue is a specific and genuinely distinctive style: small skewers of lamb, pork, or vegetables grilled over individual charcoal braziers built into the table, then wrapped by the diner in paper-thin unleavened flatbread with fresh green onions and a sweet-savory sauce. The combination is excellent, and the participatory element — the grill is at the table, you assemble each bite yourself — makes it a more engaging meal than most restaurant experiences.

The style was not invented in 2023; it has been the local food culture of Zibo for decades. What changed was visibility. The barbecue districts that emerged from the 2023 moment cluster around Eight Road Bridge (Balu Qiao) in the Zhangdian district and several other areas across the city. Quality is consistent across dozens of competing restaurants. A meal for two typically costs ¥80–150. The best approach is simply to walk the street barbecue areas in the evening and choose a busy table.

A story
In spring 2023, Chinese university students began posting videos of Zibo barbecue on social media, praising the small skewers grilled at table-side charcoal burners and wrapped in thin flatbread with green onions and sauce. The videos spread rapidly and weekend trains from Beijing and Shanghai sold out as visitors came specifically for the food. The city's response was unusual: rather than restricting or commercializing the phenomenon, Zibo set up street barbecue areas, placed complaint hotlines for overcharging, and the mayor personally thanked the students.
