Ramen Komurasaki

Old-school Kagoshima-style tonkotsu ramen

Komurasaki has been serving Kagoshima ramen on the same Tenmonkan corner since 1950 and is generally accepted as the city's defining bowl. The broth is lighter than Hakata's — pale, almost milky, made by simmering pork bones with chicken — and the noodles are straight and slightly thicker than the Fukuoka standard. A side of takana pickled mustard greens sits on every table.

The shop is small and the menu is essentially one item. Lunch lines move quickly. If you only have time for one ramen in southern Kyushu, this is a good place to spend it.
