Uwajima's most famous dish is tai-meshi — sea bream sashimi served raw over rice with a rich egg-yolk and dashi sauce. It is a local institution that appears on menus all over town and throughout Ehime Prefecture. The version here, made with the fresh bream caught in Uwajima Bay, is among the best you will find anywhere. Look for it at the restaurants near the fish market and around the town centre.
Uwajima is also known for jakoten, a deep-fried fish cake made from small white fish native to the Uwa Sea. It is sold at markets and eaten as a snack or side dish. The local mikan (citrus) varieties grown on the terraced hillsides around the bay are excellent in season.
