Samsun eats a lot of pide, and it is worth making that your default meal here. Bafra-style pide is often crisp and closed, while Terme-style pide has its own loyal following; both are better ordered hot from a busy neighbourhood shop than treated as a formal restaurant experience.
Look for kıymalı pide if you want the classic minced-beef version, or cheese and egg for something softer. It is cheap, filling, and much more specific to Samsun than the generic seafront menus.
