The Back O' Bourke Exhibition Centre is the best first stop in town. It explains the Darling River, paddle steamers, pastoral stations, Indigenous history, and the mythology that made Bourke stand for remote Australia.
It is also the visitor information centre, so use it to check road conditions before heading into the national park or farther outback.
