The Église Saint-Nicolas is the larger of Pujols' two churches and the unmissable landmark of the village — its 15th-century bell-tower doubles as the south gate of the ramparts, so you walk through it to enter the old village. The Gothic interior is dim, slightly cool even in summer, and surprisingly tall for a building wedged into the medieval street plan above.
The carved stone vaulting and a few weathered Renaissance frescoes are the things to look at; the rest is plain in the way southern French village churches usually are. The church is normally open during the day and there is rarely anyone else inside. Stand under the gateway tower for a minute when you come out — the acoustic is excellent, and you can hear the village above you through the stone.
