Frascati Superiore DOC is one of Italy's best-known white wines and has been the unofficial house wine of Rome for centuries. Made primarily from Malvasia and Trebbiano grapes grown on the volcanic soils of the Alban Hills, it is a crisp, dry white with a slightly mineral finish — best drunk young and cold. The proximity to Rome made it the city's default table wine for generations; you will still find it listed simply as "vino bianco" in Roman trattorias.
In Frascati itself, the wine is everywhere: in the fraschette by the glass or carafe, in the enotecas on the main streets, and sold directly by the producers in the surrounding countryside. Drinking it here, where the grapes were grown, is a different experience from the export version. If you visit in October, the Sagra dell'Uva harvest festival celebrates the grape harvest with free wine flowing from a fountain on the piazza.
