Manuelina

Manuelina is the founding restaurant of focaccia col formaggio. The trattoria on Via Roma has been in the Carbone family since 1885, and serves the cheese focaccia exactly as Manuelina Capurro is said to have invented it — hot from a stone oven, paper-thin, the cheese still running. A focaccia, a plate of trofie al pesto, and a glass of Pigato is the local default lunch.

The restaurant also keeps a more ambitious dinner menu with seafood, fresh pasta, and Ligurian classics like cappon magro. There is a hotel attached, useful if you want to eat heavily and walk twenty metres to bed. Open daily except Wednesdays.

Manuelina Capurro is generally credited with inventing modern focaccia col formaggio in the 1880s, when she began baking the cheese-filled flatbread in the back of her family's inn for hungry charcoal-burners coming down from the hills. The restaurant her descendants still run on the Via Roma serves what is essentially the same recipe more than 140 years later.
