Amaretti di Sassello

Sassello's most famous product is its amaretti — soft macaroons made from sweet almonds, sugar, and egg whites. These are quite different from the crunchy amaretti di Saronno familiar from Italian restaurants elsewhere; the Sassello version is moist, chewy, and fragrant with almond.

Several pastry shops in the town produce amaretti following slightly different recipes. The main shops are along the central street and welcome visitors to taste before buying. They are sold loose by weight or packaged for travel. If you visit Sassello for no other reason, the amaretti justify the detour — they are considered among the finest in Italy. The town also produces honey, mushroom preserves, and chestnut products from the surrounding woods.

A story
The amaretti of Sassello are soft, not crunchy — made with sweet almonds rather than the bitter almonds used in the Saronno version further north. The recipe is said to date from the 17th century, when the Franciscans of Sassello produced them for sale. The town's several competing pastry shops each guard their own version of the recipe, and locals have strong opinions about which is best.
