Ayden Kitchen and Bar, opened by Saskatoon-raised chef Dale MacKay after his Top Chef Canada win, is the restaurant that put Saskatoon on Canada's culinary map. The menu is ingredient-driven and prairie-focused: bison tartare, smoked beet salads, whitefish from northern Saskatchewan lakes, and house-cured charcuterie that uses the full animal. The room is warm and informal — exposed brick, an open kitchen, unpretentious service — and the wine list is well-chosen.
Book ahead, particularly on weekends. The bar menu offers a good value alternative if you can't get a table: the charcuterie board and cocktails are both excellent.
