The Pioneer Saloon on Main Street in Ketchum has been pouring whiskey and grilling steaks since 1950, and the dim wood-panelled interior with antlers and old rifles on the walls has barely changed. The line down the sidewalk on winter evenings tells you they do not take reservations.
The signature is the prime rib, served in genuinely enormous slabs with a baked potato and salad. The wine list is bigger and better than the room suggests. Expect to wait an hour at peak times, but the bar is fine to wait in and the bartenders have a long memory for regulars.
