Inside the O'Haire Motor Inn, the Sip 'n Dip has been pouring tropical drinks since 1962 and is famous for the swimming pool whose underwater windows form the back of the bar — costumed "mermaids" perform on weekend evenings. GQ once called it the number-one bar worth flying for in America, and that single line has kept the place packed ever since.

Piano Pat, who played here from 1963 to 2019, was a legend in her own right. The kitsch is sincere — bamboo, Polynesian masks, blue lights — and entirely free of irony. Get there early on a Friday or Saturday for a seat.
