The Dillinger Food and Drinkery

The Dillinger occupies a former Wells Fargo bank on Arizona Street, with the original 1930s vault still visible at the back of the bar. The menu is American comfort food — short ribs, burgers with names like "the Public Enemy", a serious chilli — and the bourbon list is unusually deep for a small town.

It is consistently the busiest place in town in the evening, especially when a touring crowd arrives off the dam tour. Bookings are taken; walk-ins on weekend nights will wait. Mains around 20-30 dollars, drinks fairly priced. Closed Mondays.
