The Vegas outpost of Mario Carbone's New York red-sauce sensation opened in 2021 inside the Aria and instantly became one of the hardest reservations on the Strip. The look is full Goodfellas: red leather banquettes, tuxedoed servers, a wall of vintage liquor bottles, Dean Martin on the speakers. The food deliberately leans 1950s Italian-American — the spicy rigatoni vodka, garlic bread sliced tableside, lobster ravioli, veal parmesan the size of a dinner plate.
Tableside service is the show. The Caesar is mixed in front of you, the meatballs are spooned from a silver tray, and dessert involves a flaming presentation more often than not. Expensive even by Strip standards, and worth it once if you like the theatre. Book a month ahead.
