Wolf Creek, or Pine Run, Grist Mill is an 1830s timber-frame mill now preserved inside Mohican State Park. It originally stood north of Loudonville, was moved to the park, and has been restored by a local friends group.
The mill is a short stop rather than a destination on its own, but it pairs well with the gorge trails. Check opening times if you want to see the interior; even when the building is closed, the grounds and setting are worth a look.
