La Paz's acclaimed vegan fine dining restaurant using Andean and Amazonian ingredients

Ali Pacha is La Paz's most ambitious vegan restaurant, housed in a converted building in the Sopocachi district. The menu is built entirely around Bolivian plant-based ingredients — native tubers, Andean grains, fermented chuño, Amazonian fruits and herbs — composed with the kind of technical precision more common to European fine dining. It's a surprising place: genuinely good food that takes its local context seriously rather than importing technique and dropping it on familiar ingredients.

Reservations are essential, especially at weekends. The tasting menu is the way to go; the à la carte menu is good but shorter. Prices are high by La Paz standards, reasonable by London or New York ones. The restaurant is in the lower part of Sopocachi, roughly 20 minutes' walk from Plaza Murillo.

Ali Pacha means "world without end" in Aymara, which is an ambitious name for a restaurant but not an inaccurate one for its founder's ambition. Chef Marco Alarcon, trained in Europe, returned to Bolivia specifically to work with the country's extraordinary range of native ingredients — the 400 varieties of potato, the forgotten Andean grains, the Amazonian fruits that never made it into international cuisine. The menu changes with what the foragers bring.
