Valledupar's cooking is firmly Caribbean Colombian — heavy on grilled meats, fried plantain, arepas, and rice. Bandeja paisa (the overloaded meat-and-bean platter) is ubiquitous, but the local version often features cabrito (goat), which is the city's signature dish. Goat is slow-cooked or grilled over charcoal and served with yuca and a salad. The area around the Plaza de los Fundadores has the greatest concentration of restaurants.
