Roadside grills selling Kano's defining street food — spiced beef skewers cooked over charcoal

Suya is northern Nigeria's most beloved street food, and Kano is widely considered its spiritual home. At dusk, roadside suya stands materialise across the city — men in white singlets fanning smoke from long charcoal grills loaded with skewers of thin-sliced beef, chicken, or ram, coated in a spice blend (yaji) of ground peanuts, ginger, paprika, and chilli. The meat cooks fast over intense heat and is served wrapped in newspaper with fresh onion, tomatoes, and extra yaji.

The best suya stalls are found at the edges of the Old City near the main gates and along the roads into Sabon Gari. The stalls are anonymous — no names, just smoke — but locals will point you to their preferred spot. Eat standing at the grill and order by weight; 200–400 naira buys a satisfying portion. The suya at Kofar Ruwa and along Murtala Mohammed Way is particularly well-regarded. Go between 7pm and 9pm for the freshest cuts.
