Oyster Omelette Stalls

Shantou's oyster omelette stalls turn tiny oysters, egg, starch, and herbs into a crisp-edged, soft-centred plate that tastes better than its humble ingredients suggest. It is a classic Chaoshan snack and a good test of a street kitchen's heat control.
