Shangluo's mountain cuisine has a character distinct from the Xi'an norm. The standard Shaanxi staples — noodles, flatbreads, vinegar-based dishes — are present, but the mountain environment adds preserved and dried vegetables, wild mushroom preparations, and seasonal foraged plants that don't appear on menus in the provincial capital. Lamb and pork cooked in clay pots are common winter dishes; in spring, fiddlehead ferns and other wild greens appear in markets and restaurants. Any restaurant in the city centre will serve the local versions of these dishes; look for places serving Shang County cuisine (商洛菜) rather than Xi'an-style fast food.
