Brothers Jiang (Jiang Shi Xiong Di)

The best-known crossing-the-bridge noodle chain in Kunming, Brothers Jiang has dozens of branches scattered across the city, with the most accessible just off Jinbi Square and on Wenlin Street. The format is the same everywhere: pick a set, pay at the counter, take a numbered token to a table, and a tray arrives with the broth, the raw ingredients, and a basket of rice noodles to add in order.

Sets range from a basic two-meat for around 25 RMB to a deluxe with prawns, fish, and ham for 80 RMB. The broth at Brothers Jiang is reliably hot enough to actually cook the meat at the table, which is the trick. Service is fast and the queues turn over quickly. Open all day from 7 a.m. to 10 p.m.
