A 1936 hummus institution in Wadi Nisnas, one of the half dozen places in Haifa with serious claims to the city's title. Service is brusque, the menu is short, and the chickpeas are ground to a near-mousse consistency.
Best in the morning when the first batch is fresh; by mid-afternoon the day's hummus is usually finished and the doors close.
