A Dungan restaurant in central Bishkek — the cuisine of the Hui Chinese Muslims who fled the Qing dynasty's persecution in the 1870s and settled in the valleys of Kyrgyzstan and Kazakhstan. The menu is hand-pulled noodles, lamb-stuffed pastries, cold spicy salads (a Dungan speciality), and very good ashlan-fu — a cold sour-spicy noodle and starch dish that is one of Kyrgyzstan's regional treasures.
The room is plain but the cooking is among the best of its kind in the city.
