A Hat Yai institution where the steamer trolleys start rolling out at six in the morning and the place stays packed through lunchtime. The dim sum is broadly Cantonese but heavier on the southern Thai pork and shrimp combinations than you would find in Hong Kong. Try the salted-egg buns, the pork siu mai, and the deep-fried prawn rolls.
Order tea (gong fu style, refilled freely), point at whatever passes on the trolleys, and pay by the stack of empty bamboo baskets at the end. Cheap, raucous, and one of the best ways to start a day in Hat Yai.
