Le Roof is Nouméa's most celebrated restaurant, built out over the lagoon on stilts at the end of a pier near Anse Vata. The setting — dining above clear tropical water with views across to the reef — is one of the most spectacular in the Pacific. The kitchen focuses on local seafood: prawns from the New Caledonian farms, crayfish from the lagoon, and whatever the fishing boats brought in that morning.

The food matches the setting — cooking that takes French technique and applies it to Pacific ingredients with real skill. Expect to pay accordingly. Reservations are essential, particularly for dinner and on weekends. It is not the only option but it is the definitive Nouméa experience for a special meal.
