Place Carnot is the central square of the Bastide and the obvious place to sit down. It has the original arcaded houses on at least one side, a baroque fountain of Neptune in the middle (1770), and a market on Tuesdays, Thursdays, and Saturdays.
The market is small but well stocked — local cheeses, charcuterie from the Corbières, olives, and the slow-cooked white beans from Castelnaudary that go into cassoulet. A coffee on the south side of the square gets the morning sun.
