Languedoc rewards those who go beyond the obvious. The Cathar castles perched on limestone ridges above the Corbières are dramatic and surprisingly accessible. The Canal du Midi is perfect for cycling — flat, tree-lined, and lined with little villages where you can stop for lunch. In summer the beaches of the Étang de Thau and the Languedoc coast get busy but the water stays warm into October.
