Prévôt is Cavaillon's most distinguished restaurant, the work of Jean-Jacques Prévôt, who has dedicated most of his career to the Cavaillon melon in all its forms. This is the restaurant that Atlas Obscura called a shrine to the melon, and the description is fair: the dining room is decorated with melon imagery, melon-themed art, and melon paraphernalia accumulated over decades, and the menu in season is built around the fruit to a degree that would seem obsessive anywhere else but makes complete sense here.
The set menus run through courses that use the melon in ways ranging from the straightforward to the surprisingly sophisticated. Outside melon season (roughly June through September), the menu turns to other Provençal produce. The restaurant is Michelin-starred and prices reflect this; book well in advance, particularly for summer visits.
