Ratskeller

The Ratskeller, in the vaulted cellars of the old town hall on the Stadtmarkt, is the obvious place for a substantial traditional meal. The menu runs to local classics — Brunswick mettwurst, Knipp (a regional buckwheat sausage), Spargel with Hollandaise in season — and a respectable beer list including the local Wolters from Braunschweig.

Bookings are advisable on weekends. The cellars themselves are 16th-century and worth seeing for their own sake; ask for a table in the vaulted rear room if you want quieter.
