Bar Aurora is on the corner of Piazza Mino and has been the default morning stop for Fiesole residents for years. The espresso is good, the cornetti arrive fresh, and by eight in the morning the terrace tables are occupied by locals reading papers and taking in the valley light before the day-trippers arrive from Florence. It's unpretentious in the way that a neighbourhood bar should be.
Later in the day it shifts into aperitivo mode without much ceremony — spritz and tramezzini on the same terrace, with the view across the piazza toward the Duomo of Fiesole. There's nothing showy about the place, which is exactly the point. If you want to sit somewhere on the piazza that doesn't feel like it was designed for tourists, this is where you sit.
