Bussink, on the western edge of the Brink, has been baking and selling Deventer koek at the same address since 1593, making it one of the oldest continuously operating businesses in the Netherlands. The koek itself — a dense, dark, sweet-spicy honey-and-rye cake — has been a Deventer speciality since the medieval cloth trade; it travelled well, kept for months, and was widely exported from the IJssel ports.
The shop sells koek in a dozen variants — plain honey, candied ginger, almond, the medieval no-spice version — together with mustard, syrups and other regional foods. The cake is normally eaten in thin slices with butter, with strong coffee. It also makes a good gift for taking home; vacuum-packed, it keeps for ages.
