The covered market in the old town is the most practical and revealing place in Conil for understanding what the town actually eats. A substantial fish section reflects the port's continuing importance: in season, the stalls display whatever came off the boats that morning — dorada, lubina, pargo, and above all the prized atún de almadraba during the tuna season from April to June.
The market is at its best before 10am, when the displays are fresh and the vendors are setting up. The fruit and vegetable section carries seasonal Andalucian produce: local tomatoes, peppers, olive oil from nearby estates. If you are self-catering, this is far better than the supermarkets on the edge of town. Even if you are not, it's worth an hour on a weekday morning to see the town going about its daily business.
