A small, ferociously local restaurant on Calle del Mar in the old town that has been turning out classic Valencian rice dishes since 1982 — paella, fideuà, arròs al horno, and at least half a dozen others — in a dining room covered floor-to-ceiling in painted ceramic tiles.
No tourist menu, no concessions, paella properly cooked to order (it takes 30 minutes — that is the point), reasonable prices for the quality. Book ahead. Closed Sunday evenings and Mondays.
