Grand Forks has a handful of restaurants that punch above their weight, mostly thanks to the Doukhobor culinary tradition. Borscht — the rich, vegetable-heavy Doukhobor version rather than the Ukrainian beetroot one — turns up on menus everywhere, alongside perogies, vereniki, nalesniki and the spinach-and-cheese cabbage rolls called holupchi.
