Hexagon is Oakville's flagship fine-dining restaurant and the only Michelin-starred establishment between Toronto and Niagara Falls. Chef Quinn Staple opened it in a converted heritage building in Old Oakville, and the cooking is contemporary French-Canadian — technically precise, ingredient-focused, and changed regularly to follow the seasons. Tasting menus run six to eight courses and pair well with the wine list, which has depth in French and Ontario bottles.

The room is intimate and the service is formal without being stiff. Reservations are essential and should be made well in advance, especially on weekends. This is a splurge by any measure, but it is genuinely world-class cooking in an unlikely setting, and worth it if you are interested in serious food.
