Tapado (Garífuna Seafood Stew)

Tapado is the reason to eat in Livingston. The Garífuna stew — coconut milk, mixed seafood, green plantain, and tropical spices — is the signature dish of the Caribbean coast, and Livingston is the best place to eat it. Order it at any of the small restaurants near the dock or along the beach, where it is prepared to order and arrives in a deep bowl with rice and johnnycakes (fried bread).

Prices are low by any standard. The best versions have whole crab and shrimp in the shell, requiring some effort to eat. Ask the restaurant what the day's catch included — tapado is always better when the seafood is local and fresh.
