Depaz Distillery

The Depaz Distillery, on the lower slopes of Mont Pelée just above Saint-Pierre, is one of Martinique's most atmospheric rum producers. It makes agricole rum — distilled from fresh sugarcane juice rather than molasses — in the AOC-certified Martinique style, and the estate bottles include aged expressions worth seeking out. The manor house, built by Victor Depaz after the 1902 disaster, overlooks the cane fields and the bay.

Tours of the distillery are available and cover the production process from cane pressing to aging in the on-site warehouse. The tasting room is generous with pours. The setting alone — volcanic slopes above, Caribbean below, rows of cane in between — makes this worth the short drive or taxi from town. The Depaz agricole blanc and the aged reserve are the standouts.

The Depaz family estate sat on the slopes of Mont Pelée above Saint-Pierre. In 1902, Victor Depaz was studying in France when the eruption killed his entire family. He returned to Martinique, rebuilt the estate, and founded the distillery in 1917 on the exact ground where the pyroclastic flow had passed. The manor house he built — still standing — faces directly toward the crater that killed his parents.
