The Sauza family founded their distillery in 1873 and named it La Perseverancia — the perseverance — a name that feels well-earned given that the brand grew into one of the largest tequila producers in the world. The distillery sits close to the centre of town and offers tours that walk through traditional and modern production methods side by side.
Sauza is credited with two useful contributions to tequila history: they were among the first to recognise that blue agave produced the best spirit, and they were the first to export tequila to the United States. The tour guides tell these stories well. The tasting room features the full range, including aged añejos that make a persuasive argument for slow sipping.
