La Cava is one of Torreón's more popular restaurants for norteño cuisine, the kind of place where locals bring visiting family to show off the regional cooking. The carne asada here — beef grilled over mesquite coals and served with flour tortillas, beans, and grilled spring onions — is the thing to order. The cabrito, when available, is similarly good: kid goat roasted until the skin is crisp and the meat is tender.
The atmosphere is comfortable rather than fancy, which suits the food. This is hearty, direct cooking that doesn't ask to be dressed up. Come hungry, order a regional beer (Carta Blanca and Tecate are brewed not far away in Monterrey), and ask what's good that day before you look at the menu.
