The mountains around Matagalpa produce some of the best coffee in Central America, and several fincas offer tours that explain shade-grown cultivation, wet processing, and the economics of the specialty coffee trade. This is not tourist theatre — these are working farms, and the tours go through active operations.
The German-founded estates with names like Hammonia, Bavaria, and La Hammonia have been operating since the 1880s and 1890s. Their owners have multigenerational knowledge of highland coffee farming. Several estates offer multi-day stays where you can participate in harvesting during the October–January picking season. Selva Negra is the most famous and most accessible; smaller fincas offer a more personal experience. Ask at your hotel or the tourism office on the central plaza for current recommendations.
