Hawaii's signature dish — raw fish cubed and marinated, now found everywhere

Poke (pronounced poh-KAY) is Hawaii's most successful culinary export — cubes of raw tuna or other fish dressed with soy sauce, sesame oil, green onion, and whatever the maker decides to add. In Honolulu it is as normal as sandwiches. Every supermarket sells it by the pound from a deli counter, and dedicated poke shops serve it over rice in bowls.

The mainland versions are generally a diluted imitation of what you find in Honolulu. Here, the fish is fresher, the portions more generous, and the flavours more confident. The best poke in Honolulu is often found in supermarket deli departments (Foodland at Ala Moana is well-regarded) and small neighbourhood spots rather than tourist restaurants. Order by the half-pound, take it outside, and eat it while looking at the ocean.
