Lotus of Siam has been called the best Thai restaurant in North America by multiple American food writers, and it sits in a worn-looking strip mall on East Flamingo Road. The dining room itself is unspectacular; the food is not. Chef Saipin Chutima's northern Thai menu — beef jerky, nam prik ong, khao soi, jackfruit curry — is properly spicy and uses ingredients flown in from Thailand. The wine list, oddly, is an award-winning Riesling-led collection that pairs sharply with the heat.
Reservations are essential. The original Flamingo Road location is the one to book; a second location at Red Rock Resort exists but the original has the deeper kitchen. Service is fast and unfussy. If you have one off-Strip dinner in town, this should be the one.
