The Williston Brewing Company is the best-regarded sit-down restaurant in town and the place where locals take visitors they want to impress. The brewery side of the operation produces a solid range of craft beers — the pale ale and the seasonal stouts are the most reliable choices — and the food menu is considerably more ambitious than the setting might suggest. Burgers are excellent, the prime rib on Friday evenings draws a loyal crowd, and the kitchen does a creditable job with walleye when it is on the menu.
The building occupies a reclaimed industrial space that captures something of the boom-era energy without being tiresome about it: exposed brick, high ceilings, and a long bar that fills up on weekend evenings with a cross-section of Williston that would have been unimaginable before the oil rush. The service can slow down when the place is busy, so arrive early or be patient.
