The working port at Zarzis is worth a walk in the morning when the fishing boats are returning. Octopus hangs drying on wooden racks, nets are spread for repair, and the fish market operates in the small shed near the harbour entrance. Zarzis has been a fishing port for centuries, and the harbour remains genuinely active. In the early morning, octopus is spread out to dry on wooden frames along the quay — a practice that has been photographed so often it has become almost iconic, but it is not staged for tourists. The fishermen work through the night and return around dawn. The catch includes red mullet, sea bream, bogue, and the octopus that ends up on almost every menu in town.
