Xiamen has a genuinely distinctive food identity rooted in the Hokkien emigrant diaspora. The flavours are lighter and less oily than most northern Chinese cooking — more restrained, with Southeast Asian influences visible in the use of peanuts, sweet potato starch, and seafood. The best eating is concentrated around Zhongshan Road and the night markets of the old city.
