Lanzhou has one of the most specific and celebrated local food cultures in China, centered on a single dish: Lanzhou beef noodles (lanzhou lamian). These hand-pulled noodles in clear beef-bone broth are eaten for breakfast by most residents, and the city's thousands of noodle shops are serious about their craft. Beyond the noodles, the substantial Hui Muslim population drives an excellent tradition of lamb dishes, flatbreads, and grilled meats — most of the best cheap food in Lanzhou is halal.
