Chaozhou Noodles and Street Food

Chaozhou street food centres on the night market area near the old city, where vendors set up from early evening serving a rotating cast of Teochew snacks: rice noodle rolls (kueh chap) in a dark herbal broth, oyster omelette, and various cold dishes of marinated tofu, vegetables, and offal from the lu wei master stock. Most stalls are cash-only and serve until late.

The morning noodle culture is equally strong: thin rice noodles in clear broth with fish balls or braised pork are the standard breakfast. The fish balls in Chaozhou are handmade and noticeably better than the machine-made version sold in most Chinese cities — firmer, bouncier, and tasting of actual fish.
