Changsha Hot Pot

Changsha's hot pot culture blends Sichuan and Hunanese traditions: the broths tend to use dried rather than fresh chilli, fermented black beans appear as a flavouring element, and the variety of offal and organ meats offered alongside the standard beef and vegetable options reflects Hunanese cooking's nose-to-tail approach. The city has hundreds of hot pot restaurants; the best concentration is in the Furong District east of the city centre, where multi-storey restaurants operate from mid-afternoon until two or three in the morning.

For a hot pot dinner, budget ¥80–150 per person including drinks and condiments. The shared cooking process — everyone dipping ingredients into the communal spiced broth — is best appreciated in a group; solo hot pot is available but misses the point. The Xiangjiang River area west of the city centre has hot pot restaurants with good views and slightly higher prices.
